SILVERY ARTICHOKE’S ARRIVE IN EARLY SPRING

In the high desert, artichokes arrive in EARLY Spring when the climate is very mild, before the heat of Summer. Artichokes are delicate plants, thought to have originally come from North Africa and Egypt, then made their eventual way to France, Spain & Italy. Most artichoke plants grow best nearer to the ocean, in fact, Castroville, California is considered the artichoke capital of the world, because 90% of US artichokes come from their misty beachside fields. By the end of May most of the artichokes have been picked, cooked and eaten and are cut down to the soil line to await next year. Artichoke reproduction is a mystery. Currently the only way to propagate them is by cuttings and grafting, which is labor intensive. So, as small farmers, we have decided to enjoy them as a special treat and don’t attempt any breeding towards commercial use. Pass the lemon aioli please.
